Just want to know if will be any possibility to use SAH for siege, I was wandering about a huge Helm Deep battle

Sieges are conducted as stands/(units versus citadels/strongholds etc. A stronghold is just another unit type in SAH much like a camp in DBA.

So there's no way to have some unit and heroes inside a castle to deend it?

yes, you just leave the units next to the stand representing the castle or fortress, they automatically defend it if it is engaged by an opponent
